Black Forest fruits muffins

These healthier muffins are so effortless to make and taste delicious with the Black Forest fruit mix, so I don't recommend changing this fruit combination. What's even better is that these muffins are loaded with antioxidants thanks to the deep purple colour of these fruits. I used frozen fruits, which is an easy and cheap way to add loads of fruits to your desserts, but fresh would be just as good. You can easily use natural yogurt if you are happy to use dairy in this recipe, both dairy and dairy-free options will work well.



Black Forest fruits muffins

Serves: 12 muffins Prep time:10 mins Cook time: 25 mins

Ingredients:

  • 2 eggs

  • 3/4 cup coconut sugar

  • 1/4 cup coconut or rapeseed oil

  • 1/2 heaped cup yogurt (I used The Coconut Collaborative plain yogurt)

  • 1 tsp vanilla extract

  • juice and zest of 1/2 lemon

  • 1 + 1/2 cup gluten-free flour blend (I used Doves farm plain white)

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 2 cups Black Forest fruits (cherries, blackberries, and blackcurrants)


Instructions:

  1. Preheat the oven to 180 degrees and prepare 12 silicone muffin cups or muffin tin.

  2. In a large bowl, whisk the eggs with the coconut sugar, oil, yogurt, and vanilla extract. Mix in the zest and juice of half a lemon.

  3. Add the flour blend, baking powder, and baking soda.

  4. You can mix the 2 cups of fruits into the batter, which is the quicker version, or do how I do: add about a tablespoon of the batter into the muffin cup (without fruits), then add the fruits individually to each cup. I like to make sure I have all three fruits in each of the muffins, hence this method, rather than mixing all the fruits into my batter. Once you placed the fruits into the muffin cup, fill up the cup with the rest of the batter.

  5. Place the muffins into the oven and bake them for 25 minutes.

  6. Let them cool completely before removing them from the silicone cups/muffin tins.

  7. Store them in an airtight container and consume them within 2–3 days.
